...the cake...

It's all a little fuzzy now, but made some modeling chocolate (white) way ahead of time. Was super easy using 16oz white chocolate block and 7 Tbs. light corn syrup. Preheated the oven to (I think) 225, then turned it off, and placed the entire block (and cardboard tray) in the oven to sit & warm. Put James to bed, and when I got it up it was perfectly melted! Typically I mess up with too much heat...doesn't matter if it's the microwave or stove top...it seizes up and turns into a big, grainy, unusable wad. I mixed in the syrup, placed it in the fridge, and took this as a good sign. That was at the beginning of the week. The next day I began sculpting Sponge Bob characters. Wasn't too hard. Reminded me exactly of Fimo, or Scuply...can only work with it for short periods, bcuz it warms up too much and starts to distort when sculpting other features. The next day, I bumped the tray...and all the pieces shattered on the floor. Fixed them, and that evening James got a hold of the tray, and did the same thing!

Finally got them altogether and finished on Friday night. Had just put James to bed, and was excited to sit down and paint them all. Made myself some coffee, got out all my gel food-colors, and brushes, and....................total disaster! The color just rolled around on the surface. I'm an artist, so...when I say I tried everything...I did. I tried thinning the color with gin, and oil, dry brushing, etc. Nothing worked. They looked terrible. Was just too much fat in the chocolate for anything to stick. I guess powdered food color is what's needed, but I didn't have any. Holding back much disipointment...I decided to scrap the sculpted characters, and re-think the entire cake. I still had the fondant.

My dad and step-mom arrived the same evening, so luckily I was distracted. I started the cake Saturday morning....remembering all I had was white, self-rising flour, and A.P. whole wheat. I went with the organic, whole wheat, and a lemon flavored cake, with lemon curd filling. The cakes didn't cook all the way through (first attempt), and after trying to rebake them, etc. I scrapped it, and started from scratch with the self-rising. Second attempt was fine, just left out the baking powder, and soda. I made sure the cakes were completely cool first. I always rush, and then the frosting starts to slide off! I decided not to use the fondant. My dad thought it was gross.  :Sad: And...I really didn't see the point. I have some piping tips and just thought I'd do a more traditional cake/decoration. I guess the frosting was too stiff, and it tore up the cake some while doing the main frosting. My dad rescued me, bcuz I was almost in tears. LoL. I thinned out the frosting just a smidge for the decorative icing, but then it was too thin, and wouldn't hold shape! By then the cake was a mess!!!! It was past the point of frustration...now it was just silly-ridiculous! Might as well made it with two left hands, and I'm right-handed! James himself probably would have done a better job!

All in all it looked terrible. The cake tasted pretty good, the filling was too sour, but the frosting was nice and buttery, and not too sweet. Edible, and James liked it, so I have a year to practice!!! Patience, lots of love, and a sense of humor got us through this birthday laughing. Except for this one small incident with the birthday candle!

Birthday Update...The Cookies

LOL.........well, I guess I already knew that the whole birthday thing wasn't going to go off without a hitch. Everything turned out GREAT, thankfully. Was just personal expectations I set too high for myself. If I had built-in camera in my house...the entire thing would have been worth taping & sharing, but elbow high in cookie dough, cake batter, and frosting...had little chance to use the camera. Unfortunately...no fiasco pictures! And, where my skills are concerned...that's honestly what it was...a fiasco!

I did make some amazing tasting cookies though! I used organic, whole wheat flour, and they turned out super-tasty, with that nice, heirloom look. I'll include the recipe at the bottom of this post. The icing I messed up on a little. Tried a quick recipe I got online, and should have known better. Was just powdered sugar and corn syrup....took forever to dry. They got a crust on them, but weren't set enough...and a minute after handing the cookie basket over to James....they were pretty much all destroyed. Still tasted good though! Always use the old fashion Royal Icing recipe with egg white, or meringue powder!!! Did I mention I was making a Cookie Basket for James?

Grampa & Auntie M came for the weekend, so on Thursday, as a quiet party....James opened his gifts from me, and I made him a Handy Manny cookie basket. Thought I could pull that off fairly easy, but he was up a lot that night, and all said....I was up till 4am. Making the cookies was pretty easy, even though I had to sketch out all the characters on paper, and cut out the cookies by hand. It's the icing that was a drag....so many colors for all those tools. Not worth making individual pots of colors, since each just needed a tiny amount here & there...I ended up pouring the un-colored icing onto a plate, then using it like an artists palette. Dabbing little dots of color, and using a toothpick.

I rolled out the dough pretty thick to make sure they could withstand James' interest. They turned out nice & hard...like teething biscuits, which is good for him. Still tasted great though, which....is also good.

ROLL OUT COOKIE DOUGH RECIPE

Ingredients:

Makes: About 3 dozen cookies.

Preheat oven to 400°F. In mixing bowl, cream butter with sugar until light and fluffy. Beat in egg and extracts. Mix flour, baking powder and salt; add to butter mixture 1 cup at a time, mixing after each addition. Do not chill dough. Divide dough into 2 balls. On a floured surface, roll each ball into a circle approximately 12 in. wide and 1/8 in. thick. Dip cookie cutter in flour before each use. Bake cookies on ungreased cookie sheet 6-7 minutes or until cookies are lightly browned.

Recipe may be doubled.

Countdown to 1st Birthday...

jamesStill not posting as much as I'd like...I sit here and try, but thoughts escape me. With the nicer weather (can tell by the recent picture)...James and I have been outside as much as possible, and to tell the truth...I'm a little burned out on the computer. I've wrapped up all the blog designs I had in queue, so that makes it easier to step away for a while, and take a break; something I was planning on doing anyway. Finding it difficult to find motivation for my own online stuff, also. I have started re-designing James' blog, but far from up-to-date on content!!! Really need to get that together! For now though...just going to stay in the moment, and reserve energy for creating a memorable experience for James' 1st Birthday!!! :Happy-Birthday:

Being a frugal, creative mom...I've tried to avoid buying him too much. Anyway, no matter what I get him...when it comes down to it...he still prefers the packaging and wrapping to the actual gifts. Fine with me. His affinity towards cardboard, tape, tools, branches, leaves, and rocks......shows me his innate creative juices, runneth over! A little man after his momma's heart!

I bought some Sponge Bob party paraphernalia today, balloons, and such. I plan on building on him a sandbox, but doubt I'll get it together for his birthday. Probably end up being a weekend project. I have two cats, and there are numerous strays in the area...so having a sandbox with a lid is a MUST, so it doesn't become the local litter box!!! At first I thought about one of those plastic, turtle sandboxes, but........those average about $50+. I can build one cheaper then that! So, that's my plan. I got him some tonka type trucks, and earth mover things...so we have something to play with in it, when it's done. Also, found some Sponge Bob pajamas at Target today. A two-set on sale for $12. They're size 4 (boys), which is way too big, but...the two pairs I bought him for Christmas (size 18 months)...barely fit him a week. At least I know these will fit and be comfy.

Big Project: The plan is to make him a Sponge Bob fondant style cake. Ha! I watch all the cake shows on TV, and I'm always saying..."I could do better then that"! Now I get to eat my words! Literally. I'm a talented sculptor...I can say that without reserve, but...I have no idea what I'm doing when it comes to sculpted cakes. As long as the materials actually perform like "clay"....I shouldn't have any problem. Double Ha! I have to say I'm a little bit worried it will be a total flop. Luckily, he's turning one, and won't care, as long as it tastes good. I'm a little worried about that as well.

I found a simple recipe for modeling chocolate. Basically, ..............................oh shit!!!! I just realized this minute that I screwed up the recipe! It was 10 oz. chocolate, and 1/3 cup of light corn syrup. I bought white chocolate, and used the whole block, which was 15oz. In my mind I thought to add 1/2 of a 1/3 of syrup (ya...not a whiz at math at 10 o'clock at night). I forgot, and only added the third. Dammit! See, this is exactly why I'm worried! My heart's in the right place. My mind? Not. Well, it's in the fridge cooling. Guess I'll just have to see how it is tomorrow, and maybe remelt if possible? Chocolate is funny about seizing up on me...rendering it useless! Worst comes to worse...I can get a new block and start again. I still have 2 days to get it done.

Anyway. Also have a recipe for "easy" marshmallow fondant...ha ha. Have sketched out what I want it to look like. I'm good at that part. Going to leave the modeling chocolate white, sculpt everything first, then paint it afterwards with food coloring. I think that will be easiest. Arg. Too much to think about right now.

James-Falcon's First Halloween! :)

I had big plans for Halloween....then talk of moving, and I didn't think we'd be here to bother. Where we're moving is not conducive to trick or treating.baby viking costumeNo sidewalks, houses too far apart, long driveways, etc. So...I put it off. The move isn't happening as quickly as I had assumed, and we were here (at the house) so.............was a last minute scramble to get things together. Blah, blah, blah.....is all an explanation on why there's not more of a "crafty" angle to the whole thing. I really wanted to post how-to's on decorating and costume making....up to Halloween. Instead...iz just a few 'finished' photos of the night of. :P

Still..........SUPER-CUTE & CRAFTY IF I DO SAY SO MYSELF. EVERYONE WE VISITED LAST NIGHT....SAID THAT JAMES WON FOR BEST COSTUME! Makes me think, "Darn....should have actually taken him to something festive, where he actually could have "won" something" ;) But...for our short jaunt around the neighborhood...got a good amount of booty (for an 8-month old) lol.

Was sorta weird for both of us, at first. I haven't been out door-to-door since....I can't remember when?!? A kid myself. I didn't even take into consideration...James' reaction to the whole thing. Till we got to the first house, and he burst in tears!!! I explained it was his first Halloween, first house. And....maybe his last (for this year). :P But....we hit a few more houses, and the crying was less and less at each doorstep. Then...a few more houses. Only about 12 all in all, but due to his super cuteness...he got nice big handfuls of candy at each. :)

baby viking costumeLuckily I had a good amount of faux fur fabric on hand. The main cover it just a square that I cut a hole in the center of, and a small slit to make sure it got over his neck easy. I had a small square of white mohair that worked great for the shoulder bulk. The rest is all cardboard! I used heavy cardboard for the dragon sides of his stroller...to look like a viking ship, and for his ax, and shield. The shoulder armor and hat I cut out of cereal box (thin) cardboard. I spray painted it with silver, then embellished it with a hot glue gun!!! Works great  & quick. That's about it. Made it all in one afternoon!
