This is a super simple recipe for coconut macaroons - Gluten-free, energy packed, and only 6 main ingredients and 1 bowl! It's a no-fail recipe that can be used creatively.
Add cocoa powder, chocolate chips, dried cherries, nuts, orange zest, lemon zest, lavender, cinnamon, grated carrot, or apple, or any yummy concoction you can think of. Macaroons store well and stay moist. You can also enhance your macs by dipping or drizzling chocolate on the finished product. Makes a great holiday gift!
Chocolate Orange Coconut Macaroons
2 cups dried coconut, unsweetened: shredded or flaked
2/3 cup sugar
1/4 cup coconut flour
1/4 teaspoon unrefined salt
2 egg whites
2 tablespoons butter
Orange zest (to taste)
1/4 teaspoon almond extract (optional)
1/2 cup chocolate chips (optional)
- Preheat oven to 350 degrees F.
- In a large bowl, blend together all ingredients.
- On parchment lined baking sheets, spoon tablespoon glops, approximately 2" apart.
- Bake for 20 minutes or until they are firm to the touch and lightly browned on the bottom. Let cool before serving.
